Mary's Zwieback

In a small cup or bowl:
1/2 c. warm water
1 tsp. sugar
1 Tbsp. yeast
Let sit for 10 minutes until the yeast is forms bubbles.

In a large bowl combine:
2 cups luke warm milk or 2/3 c. powdered milk and boiling water to fill a 2 cup measuring cup, cooled
1 tsp. salt
1 tsp. sugar
1/3 c. soft butter
1 egg

Add yeast mixture and blend.

Have 6 cups of white flour measured and ready.
Slowly add flour stirring constantly until it is too thick to stir, then start kneading.  Knead about 10 minutes, slowly adding flour around the edges and under the dough.  When the dough is kneaded cover and place in a warm place.  Let rise double, about 1-2 hours.
Turn the dough out onto a well greased counter.  Cut into 4 pieces.  Grease your hands well and pinch off small rounds of dough.  Place them on a cookie sheet.  Pinch off smaller rounds of dough and place the smaller one on top of the larger one.  Let rise about 1 hour.
Bake 350 degress for about 1/2 hour or until golden brown.
