Matrimonial Cake


Matrimonial Cake

The dates Mom used for this cake can only be bought in BC, so I buy these dates when we are there.

1/2 lb.pressed dates cut in thin slices
1 1/2 cups boiling water
1/2 cup sugar
Put this into a pot and stir well, then bring to a slow boil and stir and cook until the dates are mushy and thickened, about 5-10 minutes.  Set this mixture aside to cool.

1 c. soft butter
1 c. brown sugar
1 3/4 c. all purpose flour
1 tsp. salt.
1/2 tsp. baking soda
1 1/2 cups. rolled oats

Beat together the butter and sugar.
Sift the flour, salt and baking soda together, then add it to the butter and sugar and mix well.  Sir in the rolled oats.

Put half the dough into a greased 8 x 11 pan, pressing and flattening it with your hands to cover the bottom of the pan.  Spread with the cooled date filling.  Cover with the remaining crumbs.
Bake 350 degrees for 25-30 minutes.
I don't have an 8 x 11 pan so used a 9 x 13 pan and I don't have quite enough dough to cover the top.
