Roll Kuchen

At all our family gathering in summer my Mom always made roll kuchen and we always ate them with watermelon.  So today I am making roll kuchen for my family.  This recipe says it is for 10 people but would serve 15.  (The leftovers were gone by mid afternoon.)

Mary's Roll Kuchen

2 cups buttermilk                   
6 eggs

Whisk the buttermilk and eggs well.

Sift together:
   5 cups flour
   3 tsp. baking powder
   1 tsp. salt

Add dry ingredients to the liquid, stir well.  
Put a cup of flour on the counter and turn the dough onto the flour.  Work the flour in by hand and form the dough into a ball.  Dough will be very soft.  Divide the dough into 4 parts.

Roll out the dough to 1/4" thick using a lot of flour on the board.  Cut into 2" by 4" strips.  Cut a slit into the middle of the rectangle and pull one end of the dough through the hole.

Deep fat fry until golden brown.  Mom's original recipe says to fry it in lard.
Mary's great granddaughter Kelsey is a natural in the kitchen.
